1 1/8 c. sugar
1 1/2 tsp. vanilla
1/8 tsp. (rounded) cream of tartar
1 pkg. chocolate chips (or mint chocolate chips!)
Beat egg whites, cream of tartar and vanilla until soft peaks form. Gradually beat in sugar and continue beating until stiff peaks form. Fold in chips. Drop by teaspoonfuls onto parchment lined cookie sheet. Bake at 300 for about 20 minutes.
